Denise says:

  • This is a really useful side dish that is perfect with most main courses or enjoy on its own with a salad.
  • It is flavoursome without being too overpowering.

Ingredients:

  • 1 tablespoon rapeseed oil
  • 1 large white onion – peeled and chopped
  • 200g basmati white rice
  • 4 cloves garlic - peeled and finely chopped
  • 2 cinnamon sticks
  • 4 cardamon pods – bashed
  • 400ml water plus 1 tablespoon vegetable stock powder
  • 5 threads saffron – soak in 50ml cold water
  • 1-2 bay leaves
  • 75g raisins
  • Garnish:  Chopped almonds and pomegranate seeds

Method

  1. Heat the oil in a saucepan and sauté the onion.
  2. Add the rice, cook for 2 minutes, add the garlic, cinnamon sticks, cardamon pods.
  3. Add the water, stock powder, saffron threads and water, bay leaves and raisins.
  4. Bring to the boil, cover and simmer for 10 minutes.
  5. Turn the heat off and leave with the lid on for 10 minutes.
  6. Remove the cinnamon sticks and bay leaves – just before serving.
  7. Garnish with chopped almonds and pomegranate seeds.
