- This is a really useful side dish that is perfect with most main courses or enjoy on its own with a salad.
- It is flavoursome without being too overpowering.
Ingredients:
- 1 tablespoon rapeseed oil
- 1 large white onion – peeled and chopped
- 200g basmati white rice
- 4 cloves garlic - peeled and finely chopped
- 2 cinnamon sticks
- 4 cardamon pods – bashed
- 400ml water plus 1 tablespoon vegetable stock powder
- 5 threads saffron – soak in 50ml cold water
- 1-2 bay leaves
- 75g raisins
- Garnish: Chopped almonds and pomegranate seeds
Method
- Heat the oil in a saucepan and sauté the onion.
- Add the rice, cook for 2 minutes, add the garlic, cinnamon sticks, cardamon pods.
- Add the water, stock powder, saffron threads and water, bay leaves and raisins.
- Bring to the boil, cover and simmer for 10 minutes.
- Turn the heat off and leave with the lid on for 10 minutes.
- Remove the cinnamon sticks and bay leaves – just before serving.
- Garnish with chopped almonds and pomegranate seeds.
