These little biscuits are delicious any time of day – breakfast on-the-go, after a big meal or just with a cup of coffee. I quite like them for breakfast – crumbled into a bowl with yoghurt and fruit. They are vegan, and sweetened with natural sugar, so should suit most dietary requirements! My secret ingredient is Foodie Flavours natural passion fruit flavouring – Foodie Flavours supply numerous extracts which are great in baking, desserts, drinks and more, and have been recently certified Kosher. Ingredients:
- 300g porridge oats
- 100g fruit granola
- ~
- 150ml almond milk
- 150g almond butter
- 2 teaspoons Food Flavours passion fruit extract
- Pinch salt
- 2-3 tablespoons maple syrup – to taste
- 1 teaspoon baking powder
Method
- Preheat the oven to 160°C / 350°F / Gas mark 4.
- Line two trays with baking paper.
- Combine the oats and granola together in one bowl.
- Place the milk, almond butter, Foodie Flavours passion fruit extract, salt, maple syrup and baking powder in a large bowl and mix well to combine. Remove and set aside.
- Add the porridge and granola to the almond butter mixture and stir to combine well.
- Using an ice cream scoop or tablespoon, take a spoonful of mixture and place onto the oven tray.
- Bake for 20 minutes or until golden. Leave on a rack to cool.
