  • Makes 10-12

Ingredients:

  • 40g berry granola
  • 125g oat flour – just grind the oats in a food processor
  • 1 teaspoon baking powder
  • 1 tablespoon mixed spice
  • 1 tablespoon cinnamon
  • ¼ teaspoon grated nutmeg
  • 50g chopped dried cranberries
  • 50g dark chocolate – roughly chopped
  • 255g nut or seed butter (I used almond butter)
  • 4 Medjool dates soaked in boiling water for 10mins, drained & pureed to a paste
  • 80ml extra virgin olive oil

Method

  1. In a bowl combine the dry ingredients and set aside (everything except the nut butter, date paste and olive oil).
  2. In another bowl combine the wet ingredients and set aside.
  3. Line two baking trays with baking parchment.
  4. Fold the wet into the dry until fully incorporated.
  5. Scoop the dough into approximately 10-12 balls and flatten a little with the back of a spoon or your fingers. Leave to chill for 30 minutes in the fridge.
  6. Pre heat the oven to 170°C on the fan function.
  7. Place in the pre heated oven for 12-15 minutes, checking at about 10 minutes. They should be lightly golden and still a little soft. They will firm up once cooled.
  8. Allow to cool completely on the trays, if you can wait that long!
