- They bring together the natural sweetness of cranberries, the creaminess of dark chocolate, with warming spices – a treat for your gut and your tastebuds.

- Makes 10-12
Ingredients:
- 40g berry granola
- 125g oat flour – just grind the oats in a food processor
- 1 teaspoon baking powder
- 1 tablespoon mixed spice
- 1 tablespoon cinnamon
- ¼ teaspoon grated nutmeg
- 50g chopped dried cranberries
- 50g dark chocolate – roughly chopped
- 255g nut or seed butter (I used almond butter)
- 4 Medjool dates soaked in boiling water for 10mins, drained & pureed to a paste
- 80ml extra virgin olive oil
Method
- In a bowl combine the dry ingredients and set aside (everything except the nut butter, date paste and olive oil).
- In another bowl combine the wet ingredients and set aside.
- Line two baking trays with baking parchment.
- Fold the wet into the dry until fully incorporated.
- Scoop the dough into approximately 10-12 balls and flatten a little with the back of a spoon or your fingers. Leave to chill for 30 minutes in the fridge.
- Pre heat the oven to 170°C on the fan function.
- Place in the pre heated oven for 12-15 minutes, checking at about 10 minutes. They should be lightly golden and still a little soft. They will firm up once cooled.
- Allow to cool completely on the trays, if you can wait that long!
