This popular apple cake is the perfect dessert or tea cake when entertaining as it serves at least 10 portions. It is delicious without the chocolate topping if preferred but I feel once you have sampled it with the chocolate your preference with be decided. The cake is easy to slice so serving it is straightforward.

NB: The chocolate topping needs 2 hours to set so make it in advance or even the night before!

Preparation Time:15 minutes plus 30 minutes cooling time and a minimum 2 hours refrigeration.

Ingredients:

1 tablespoon margarine or oil – to grease the tin
500g eating apples – peeled, cored and grated
350g icing sugar
3 teaspoons vanilla sugar
300g plain flour
5 eggs
75g walnuts – chopped
75g raisins
2 teaspoons baking powder

Topping
2 tablespoons apricot or raspberry jam
150g plain chocolate
75g margarine

Method

1)Pre-heat the oven to 180 C/ 350 F/ Gas mark 4.
2)Line and grease a 22 cm/ 9 inch loose base cake tin.
3)Put the eggs, icing sugar and vanilla sugar in a mixing bowl and whisk together.
4)Stir in the grated apple, raisins, flour, baking powder and nuts.
5)Bake for 1 hour or until firm in the centre and golden brown.
6)Let it cool for 30 minutes before adding the topping.
7)Melt the chocolate and margarine over a double-boiler.
8)Spread the jam over the top of the cake and then pour over the chocolate mixture.
9)Leave to set in the refrigerator for 2 hours or overnight.
