Ingredients:

  • Crumble Base & Topping
  • 200g cold unsalted butter, cubed
  • 30g plain flour
  • 100g light brown sugar
  • 100g rolled oats
  • 1 teaspoon cinnamon
  • Pinch of salt
  • 3 tablespoons runny honey
  •  
  • Filling
  • 500g Bramley or Braeburn apples, peeled and diced
  • 2 tablespoons honey
  • 2 tablespoons lemon juice
  • 1 teaspoon cinnamon
  • ¼ teaspoon ground cardamom
  • 1 tablespoon cornflour
  • 100g chopped dates
  •  
  • Glaze
  • 2 tablespoon icing sugar
  • 1–2 teaspoons honey
  • A few drops of water

Method

  1. Heat oven to 180°C and line a 20cm square tin.
  2. Rub butter into the flour, sugar, oats, cinnamon and salt until crumbly.
  3. Stir in the honey.
  4. Press two-thirds into the tin and bake for 15 minutes.
  5. Toss the diced apples with honey, lemon juice, cinnamon, cardamom, cornflour and dates.
  6. Spread over the baked base.
  7. Top with the remaining crumble mixture.
  8. Bake for 30–35 minutes until golden.
  9. Cool completely before slicing.
  10. Drizzle with the honey glaze.
