  • This recipe is vegan but you can use regular milk if you prefer.

Ingredients:

  • 150g porridge oats
  • 100g hazelnuts – roughly chopped and roasted
  • 750ml almond milk
  • 5 cracked cardamon pods – discard pods
  • 2 large bananas – 1 smashed and 1 sliced
  • 6 apricots – destoned and sliced
  • 3 tablespoon maple / date syrup
  • Garnish:  2 apricots – sliced

Method

  1. Preheat the oven to 190°C / Gas mark 5.
  2. Mix the oats and 75g of the nuts together. Stir in the milk, cardamon pods and a pinch of salt. Add the mashed banana and sliced banana, sliced apricots and stir together.
  3. Bake for 30 minutes until the oats are creamy and most of the milk has been absorbed.
  4. Remove from the oven. Drizzle with maple syrup and scatter with the remaining 25g hazelnuts and sliced apricots.
  5. Serve into bowls with yogurt, ice cream or custard.
