Ingredients:
- 150g porridge oats
- 100g hazelnuts – roughly chopped and roasted
- 750ml almond milk
- 5 cracked cardamon pods – discard pods
- 2 large bananas – 1 smashed and 1 sliced
- 6 apricots – destoned and sliced
- 3 tablespoon maple / date syrup
- Garnish: 2 apricots – sliced
Method
- Preheat the oven to 190°C / Gas mark 5.
- Mix the oats and 75g of the nuts together. Stir in the milk, cardamon pods and a pinch of salt. Add the mashed banana and sliced banana, sliced apricots and stir together.
- Bake for 30 minutes until the oats are creamy and most of the milk has been absorbed.
- Remove from the oven. Drizzle with maple syrup and scatter with the remaining 25g hazelnuts and sliced apricots.
- Serve into bowls with yogurt, ice cream or custard.
