
Denise says:
- A main course salad that can be prepared in advance is extremely useful over the forthcoming High Holidays – lunch or dinner.
- For a vegetarian option substitute the chicken for cauliflower steaks, slabs of tofu or cooked aubergine cut in half.
- I used a crinkle cutter to prepare the vegetables, not essential but it does give them a great appearance!

Ingredients:
- For the Turmeric Chicken
- 4 large chicken skinless boneless chicken thighs or chicken breasts
- 1 tablespoon turmeric
- 2 garlic cloves – peeled and minced
- 1/2 teaspoon chili flakes 1 teaspoon paprika
- ¼ teaspoon salt
- Salad
- 200g baby carrots -trimmed 200g parsnips -peeled and sliced into wedges 200g turnips – peeled and sliced into wedges 200g sweet potato – cut into wedges (skin on)
- 2 tbsp olive oil
- ~
- 200g shredded red cabbage
- Handful of flat leaf parsley – finely chopped
- 2 oranges – peeled and sliced into segments
- Orange dressing
- Zest and juice of 1 orange
- 4 tbsp olive oil
- 2 tsp white wine vinegar
- 1 tsp honey
- Salt and pepper
Method
- Mix the turmeric, garlic, chili, paprika and salt and rub into the chicken. Set aside to marinate whilst preparing the other ingredients or overnight.
- Preheat the oven to 200°C. Place the vegetables onto a lined baking tray and drizzle with olive oil and a pinch of salt. Bake in the oven for 35-40 minutes; stir the vegetables from time to time.
- Place the chicken on a tray lined with baking parchment paper and cook in the oven at the same time, covered for 40 minutes. Set aside to cool slightly. Once cooled, shred the chicken.
- To make the dressing combine all the ingredients in a bowl and whisk together. Set aside.
- Assemble the salad by mixing red cabbage, the roasted vegetables, shredded chicken, parsley, and orange segments.
- Pour the dressing over just before serving.
