This hot fruit salad is absolutely delicious – and very different! I love the combination of star anise with pineapple, figs and plums – it is truly a great example of fusion cooking. As well as being so quick and simple to make it is also a tasty low fat dessert. Make it in advance and reheat gently.
As an alternative, you can make it with apples, pears and mangos, a bit less exotic but just as tasty!

Preparation Time: 10 minutes
Cooking Time: 20 minutes
Serves: 6

Ingredients:

1 small pineapple – peeled, cored and cut into semi circles
4 plums – de stoned and cut in half
6 fresh figs – cut in quarters
2 tablespoons – honey
2 tablespoons – soft brown sugar
1 lemon – juice and zest
1 teaspoon – cinnamon
6 star ainse
4 star fruit – sliced in 4
100ml Dessert wine or Amaretto
6 passion fruit – inside scooped out
or
2 Pomegranates - deseeded

Method

1)Pre-heat the oven to 200ºC/400ºF/ Gas Mark 6.
2)Prepare the fruit as described and place all but the passion fruit in a deep oven to table ware dish.
3)Mix the honey, brown sugar, lemon juice, cinnamon, star ainse and wine together and pour over the fruit.
4)Roast for 20 minutes.
5)Remove from the oven and place on a large serving plate.
6)Drizzle over the passion fruit or pomegranate seeds evenly.

To serve the stylish way: Mix in the passion fruit seeds and serve with vanilla ice cream, mascapone cheese, thick Greek yoghurt or single cream.
