- This is great way to add fibre to an everyday vegetable. Enjoy as a vegan side dish, alternatively add tofu or chicken for a main course.

- Serves: 4 people
Ingredients:
- 400g sprouting broccoli – trimmed to remove tough stem
- 3 tablespoons olive oil
- 3 cloves garlic – finely chopped
- 1 red chilli – finely sliced
- ~
- 50g rolled oats
- 50g toasted almonds – skin on, roughly chopped
- Pinch salt
- Pinch sugar
- To Serve: 1 lime – cut into wedges
Method
- Cook the broccoli in a saucepan of boiling water for 2 minutes, then drain in a bowl of cold water to refresh. Drain well and pat dry.
- Drizzle with 1 tablespoon of the olive oil and season well. Heat a large frying pan until very hot and sear the broccoli until charred, then remove and set aside.
- Let the pan cool slightly before using again. Add the remaining olive oil.
- Add the garlic, chilli, oats and cook for about 4 minutes until fragrant and toasted. Stir through the toasted almonds and season with salt and a pinch of sugar.
- Transfer to a serving dish and garnish with wedges of lime.
