Denise says:
- According to legend, Queen Esther enjoyed a diet rich in nuts and seeds, to keep kosher whilst in the Persian Palace.
- These incredibly easy biscuits are in keeping with that tradition, plus they happen to be gluten-free, egg-free and dairy-free! You can make the biscuits whatever size you want but do keep them uniform to ensure the same cooking time.
- Preparation Time: 10 minutes
- Cooking Time:15 minutes
- Makes Approximately 35
Ingredients:
- 100g flaked almonds
- 160g pumpkin seeds
- 4 tablespoons chia seeds
- 4 tablespoons poppy seeds
- Pinch of salt
- 4 tablespoons maple syrup
Method
- Preheat your oven to 180°C.
- Mix the nuts, seeds and salt in a bowl. Then mix in the maple syrup.
- Line an oven tray with baking parchment. Spoon equal sized dollops of mixture onto the tray until all the mixture is used up. No need to leave a large space between each biscuit as they do not spread like regular biscuits!
- Bake for 15 minutes, or until golden brown.
- Allow to cool completely to firm up (they may break apart if you attempt to move them whilst still warm).
