- This is a great family meal for Chol Ham’oed Pesach. Enjoy with some green vegetables or a salad. The Gefen sweet & sour duck sauce adds a slightly sweet and vinegary flavour to the meat, a flavour loved by Jewish people.

Ingredients:
- Meat Loaf
- 450g minced beef
- 1 small onion – peeled and finely chopped
- 1 tablespoon smoked paprika
- 2 tablespoons Passover Gefen Sweet & Sour Duck Sauce
- 1 tablespoon dried coriander
- 3 cloves garlic – peeled and finely chopped
- 2 tablespoons medium matzah meal
- 1 egg – lightly beaten
- Bunch of fresh oregano or parsley
- Salt and freshly ground black pepper
- Topping
- 300g potatoes – King Edward or Maris Piper – peeled and roughly chopped 1 egg white 1 tablespoon non dairy margarine 4 spring onions – trimmed and sliced on an angle 2 tablespoons fresh parsley – finely chopped
- Salt and pepper – to taste
- Serve with Gefen duck sauce
Method
- Line a loaf tin with baking parchment – or loaf tin parchment insert.
- Preheat the oven to 180C/ 350F/ Gas mark 4.
- Mix all the meat loaf ingredients together in a large mixing bowl. Transfer to the prepared loaf tin and spread out evenly.
- Cook for 25 minutes.
- Meanwhile cook the potatoes in a saucepan of boiling water until soft. Mash with a potato ricer or fork so that there are no lumps.
- Stir in the egg white, margarine, spring onions, parsley and season well with salt and pepper.
- Remove the meat loaf from the oven. Drain off any excess liquid. Spoon over the mashed potato and using a fork make decorative lines.
