- Given the importance of gut health, I am using Kefir yogurt in my overnight oats.
- These kefir overnight oats are packed with fibre, protein, and gut-friendly probiotics for a nutritious breakfast. The consistency and thickness of kefir makes it a perfect substitute for milk and yogurt in overnight oats!
- Kefir is a fermented milk drink that's similar to yogurt but has a tangier taste and thinner consistency. It's made using kefir grains, which are a collection of bacteria and yeasts that look like tiny cauliflower florets. Kefir is high in probiotic and low in lactose and contains vitamins, minerals, and enzymes.
Ingredients:
- 60g rolled porridge oats
- 1 heaped tablespoon chia seeds
- Pinch cinnamon
- 240g kefir plus 30g for topping
- 1 teaspoon vanilla extract
- 2 dates – finely chopped ~ ideally medjool dates
- Topping:
- 2 tablespoons toasted almonds,
- 50g blueberries
- 2 tablespoons pumpkin seeds
Method
- Mix together the oats, chia seed and cinnamon.
- Stir in the wet ingredients; the kefir, vanilla extract and chopped dates. Mix well.
- Cover with a lid or cling film or place into mason jars. Place in the fridge overnight or for a minimum of 2 hours.
- In the morning, add the toasted almonds, blueberries and pumpkin seeds.
