- Preparation Time: 10 minutes plus 1-2 hours to freeze

Ingredients:
- 1kg plant based yoghurt – flavour of your choice (I like vanilla or coconut)
- 2 tablespoons dried cranberries
- 2 tablespoons chopped dried figs
- Pinch cinnamon
- Topping:
- Seeds of 1 pomegranate
- 25g pistachio nuts – finely chopped
- 2 tablespoons toasted coconut flakes
- 50g dried apricots – finely chopped
Method
- Mix the yoghurt with the cranberries, figs and cinnamon in a large bowl.
- Line a baking tray 35cm x 26cm with baking paper and pour the yoghurt mixture on top, about 1 ½ cm thick.
- Sprinkle over the pomegranate seeds, coconut flakes and apricots and place in the freezer for 1-2 hours or until completely frozen.
- Remove from the freezer and use an ice cream scoop to serve.
