Denise says:

  • Preparation Time: 10 minutes plus 1-2 hours to freeze
  • Serves: 8-10

Ingredients:

  • 1kg plant based yoghurt – flavour of your choice (I like vanilla or coconut)
  • 2 tablespoons dried cranberries
  • 2 tablespoons chopped dried figs
  • Pinch cinnamon
  • Topping:
  • Seeds of 1 pomegranate
  • 25g pistachio nuts – finely chopped
  • 2 tablespoons toasted coconut flakes
  • 50g dried apricots – finely chopped

Method

  1. Mix the yoghurt with the cranberries, figs and cinnamon in a large bowl.
  2. Line a baking tray 35cm x 26cm with baking paper and pour the yoghurt mixture on top, about 1 ½ cm thick.
  3. Sprinkle over the pomegranate seeds, coconut flakes and apricots and place in the freezer for 1-2 hours or until completely frozen.
  4. Remove from the freezer and use an ice cream scoop to serve.
