This is a colourful, fun way to serve fruit in Summer. It uses seasonal fruits with a creative presentation, which all the family will love!
Preparation Time: 10 minutes
No cooking
Serves: 4-6 people
Ingredients:
250g mascarpone or thick natural kefir yoghurt (or non-dairy alternative)
1 tablespoon honey
½ teaspoon vanilla extract
1 watermelon – cut into 5cm thick discs, or smaller if serving as individual portions
Toppings: Fresh berries, Fresh mint
Method
Using a sharp knife, slice your watermelon into 4-5cm thick discs.
Mix the honey and vanilla extract into your mascarpone or yogurt.
Using a spatula, spread an even layer of the mascarpone or yogurt mixture onto each disc, leaving a bit of empty space at the edges (where your “pizza crust” is).
Layer your fresh fruit and fresh mint on top as you please. You can add as little or as many toppings as you like!
Drizzle with honey or maple syrup for extra sweetness if desired.
