This colourful salad is ideal as a starter or side dish to accompany an oriental meal. Mirin is sake combined with sugar which gives the recipe a smooth roundness and is readily available in the kosher supermarkets.

Preparation Time: 15 minutes
Cooking Time: 5 minutes
Serves: 6-8 people

Ingredients:

For the dressing
4 tablespoons mirin
3 tablespoons rice vinegar
2 tablespoon sweet chilli sauce
1 garlic clove – peeled and minced
4 cm piece ginger – peeled and grated

Salad

200g rice vermicelli
100g sugar snaps - trimmed
1 red pepper – deseeded and cut into fine slices
1 small courgette – thinly sliced
8 radishes – thinly sliced
100g baby spinach leaves

Salt and freshly ground black pepper
2 tablespoons toasted sesame seeds
2 tablespoons black nigella seeds

Method

1) Cook the egg noodles according to the packet instructions, drain and refresh briefly under cold water. Roughly chop.
2) Combine the dressing ingredients in a large bowl and toss into the warm egg noodles.
3) Add the sugar snaps, red pepper, courgette, radish and spinach to the noodles.
4) Mix well to ensure that everything is well combined.
5) Serve sprinkled with sesame and nigella seeds.
