I love this delicious pasta dish as it is so simple to make and makes a small piece of fish go a long way!

To make this in extra quick time cook the salmon in a covered dish with 3-4 tablespoons white wine/water in the microwave on ‘high’ for approximately 3 minutes. Or you can pan fry in olive oil or butter until the salmon is firm to touch.

500g Pappadelle Pasta – or use tagliatelle if unavailable
500g Fresh salmon -
150 ml double cream
Zest and Juice of 1 lemon.
Bunch of fresh basil
Salt and fresh ground black pepper
Extra virgin olive oil – for drizzling
100g Pine nuts - toasted

Method

Method
1) Pre-heat the oven to 200ºC/400ºF/ Gas Mark 6.
2) Place the salmon in an ovenproof dish with the lemon juice. Season the salmon and cover.
3) Cook for 15 minutes or until the salmon is firm to touch and no longer bright pink inside.
4) Cook the pasta according to the packet instructions. Drain and set aside.
5) Toast the pine nuts by frying in a dry saucepan so that they are just coloured. (Keep an eye on them as they have a tendency to burn quickly and will taste bitter if they do!)
6) Drizzle some extra virgin olive oil over the pasta. Mix in the cream, chopped basil, cooked salmon, zest of lemon and heat gently for 2 minutes. Add the toasted pine nuts.

To serve the stylish way: Place in a large pasta bowl with basil leaves, and a dusting of black pepper.
