Turkey schnitzel is a great family favourite and as it is served as individual portions, it makes serving very straightforward. This can be made with chicken too. Slightly different with a coating of mustard and mayonnaise before being coated with matzah meal, egg and finally breadcrumbs. Really delicious!

Ingredients:
- 6 turkey schnitzels/ chicken breast
- 4 tablespoons Rapeseed Oil
- ~
- 1 tablespoon English mustard 2 tablespoons mayonnaise
- ~
- 5 eggs – slightly beaten
- 200g breadcrumbs
- 100g fine matzah meal
- ~
- Salt and freshly ground black pepper – to taste
- Garnish: Sprigs of fresh parsley
- Lemon wedges
Method
- To make the schnitzels place the breadcrumbs, matzah meal and beaten egg into 3 separate dishes.
- Season the meat with salt and freshly ground black pepper.
- Mix the mustard and mayonnaise together and spread over the turkey fillet.
- Coat the chicken into beaten egg followed by matzah meal. Coat again in the egg and finally into the breadcrumb mixture.
- Heat a large frying pan with rapeseed oil.
- Fry the turkey until golden for about 3- 4 minutes on each side depending on thickness, then transfer to a rack.
- Place in the oven preheated at 200C/ 400F/ gas mark 6 on a rack for 10 minutes to complete cooking.
