This is an unusual savoury salad combination using a refreshing healthy mix of fresh ingredients. No cooking is required and it is suitable for use all year round, especially during the 3 weeks and even Pesach!

Avocados provide nearly 20 essential nutrients including fibre, Vitamin E, B vitamins and folic acid. They are extremely versatile in everything from scones, muffins, smoothies, dips/ salsas to soups, sushi and even ice cream!

To speed up the process of ripening an avocado place the fruit in a brown paper bag and store at room temperature with a banana or apple. Bananas and apples give off natural ethylene gas, so the more apples and bananas in the bag the quicker your avocados will ripen!

Serves: 6 people

Ingredients:

Dressing
1 1/2 tablespoons extra-virgin olive oil
1 1/2 tablespoons fresh lime juice
2 teaspoons honey
1/4 teaspoon sea salt

Salad
600g red seedless grapes, halved
2 tablespoons snipped fresh parsley
1 tablespoon red chilli - de seeded and finely chopped
2 spring onions, sliced
2 ripe avocadoes, cubed
50g roasted, pumpkin seeds – omit for Pesach!
50g crumbled feta cheese (optional)

Method

To prepare the dressing:
1. Whisk together the oil, lime juice, honey, and salt in a large bowl.

To prepare the salad:
1. Stir the grapes, parsley, chilli, and spring onions into the dressing.
2. Add the avocado and stir again lightly.
3. Sprinkle the top with the pumpkin seeds and cheese, if desired.
