This is a Hungarian speciality for Yom Kippur. I like to use chicken pieces but whole breasts can be substituted if preferred. Silverman's butchers cut their poultry to order so you can choose if you want it portioned for 4, 6 or 8 pieces.

It is served with thick egg noodles or pappadelle pasta; a dish comprised of family favourite ingredients that are suitable for fasting on.

Paprika is a fine powder ground from certain varieties of Capsicum /peppers which vary in size and shape. They may be small and round (Spain and Morocco) or pointed and cone shaped (Hungary and California). They are larger and milder than chilli peppers. Paprika is produced from peppers ripened to redness, sometimes called ‘pimento’, the same as used to stuff olives. The powder can vary in colour from bright red to rusty brown and in taste from sweet to smokey to spicey.
Cooking with paprika The main aspect to remember is that paprika only releases its colour and flavor when heated. Thus, sprinkling ground paprika over colourless dishes may improve their appearance as a garnish, not as as flavouring.
Chicken Paprikash is delightfully simple to make and is popular with everyone I have served it to!

Preparation Time: 15 minutes
Cooking Time: 1 hour and 40 minutes
Serves: 8 people

Ingredients:

1 large chicken – cut into 8 pieces
2 tablespoons olive oil
2 onions – peeled and roughly chopped
2 green peppers- cut into strips
475ml /2 cups chicken stock
30g/ ½ cup smoked or sweet paprika
Large egg noodles – 55g/1 cup per person
2 tablespoons margarine or olive oil

Garnish
Sprigs of Parsley

Method

1)Pre-heat the oven to 160 C/ 325F/ Gas mark 3.
2)Dust the chicken with the paprika so that it is nicely coated.
3)Heat a large frying pan with the olive oil. Sauté the chicken pieces, onion and green pepper.
4)Add the chicken stock.
5)Transfer to an ovenware dish with a lid or cover with foil.
6)Cook for in the oven for 1 1 /2 hours.
7)Cook the noodles according to the packet instructions. Add margarine or olive oil to the noodles so that they do not stick together.

To serve place the egg noodles on a large plate and put the chicken paprikash on top. Garnish with sprigs of parsley
