I am always looking for a quick supper that the whole family will enjoy and this is definitely a good recipe to satisfy everyone. Adding watercress, cucumber and peppers is a great way of including some vegetables to encourage children as well as to add to your 5 a day quota. I have used chicken but cooked turkey is a tasty alternative. Infact watercress is classed as a super food because it is so high in vitamin C and antioxidants.

Hoisin sauce is a thick dark brownish red sauce which is sweet, tangy and spicy. It is made from soya beans, salt, flour, sugar, vinegar, chilli, garlic and sesame oil. It may be used as a dip, and as a baste for roasted meats. Should you not find Hoisin sauce in your supermarket, plum or sweet chili sauce make a tasty alternative.

Serves: 4 people

Ingredients:

400g chicken
8 tablespoons hoisin sauce
8 small pancakes
½ cucumber – seeded and shredded
1 red pepper – seeded and finely sliced
100g watercress

Garnish
1 tablespoon 5 spice powder

Method

1)Pre-heat the oven to 200 C/400F/ Gas mark 6.
2)Place the chicken in a covered ovenware dish. Cover with 100ml white wine and 150ml water. Season with salt and freshly ground black pepper.
3)Cook for 20 minutes or until cooked through. Remove the meat, discarding the liquid and slice into strips.
4)Heat the grill to its highest setting. Mix the chicken with half of the hoisin sauce so that it’s coated, then spread out onto an ovenproof dish.
5)Grill until sizzling. This will take about 3 minutes.
6)Warm the pancakes under the grill or according to the pack instructions.
7)Spread the pancakes with the remaining hoisin sauce. Fill up with the finely sliced cucumber, red pepper and watercress. Wrap up and cut in half.

To serve: Dust the plate with some 5 spice powder and enjoy while still warm.
