These fudge like brownies are really delicious as part of a Shavuot or Chanukah afternoon tea or dessert. I have made these Brownies using low fat cream cheese which gives them a wonderful fudge-like texture. They are extremely morish and making a double quantity and freezing the second batch might prove useful! Preparation Time: 15 minutes Cooking Time: 40 minutes Makes: 20 pieces Will freeze Can be made in advance

Ingredients:

850g light low fat cream cheese or parev toffuti cream cheese 350g muscovado or soft brown sugar 100g cocoa powder 2 eggs 2 tablespoons almond essence 30g ground almonds 150g plain flour sieved 100g almonds (skin on) - toasted and roughly chopped Topping:  75g Almonds (Skin on ) - roughly chopped

Method

1) Pre-heat the oven to 180ºC/350ºF/ Gas mark 4. 2) Line a 22 cm (9 inch) square tin with baking parchment paper. 3) In a large bowl, combine the cream cheese with the sugar. 4) Add the cocoa powder, eggs, almond essence, ground almonds and sieved flour and beat well. 5) Pour the mixture into the prepared tin. 6) Sprinkle the topping with chopped almonds. 7) Bake in the pre-heated oven for 40 minutes until set. 8) Remove from the oven, allow to cool in the tin. To serve : Cut into squares.
