This is a joyous festival that commemorates the rededication of the second Temple way back in 165 BC. We are told that the Temple’s desecration there was insufficient oil to sustain the lights on the golden candelabra which was supposed to be lit at all times. Only a tiny jug of oil was found with enough for 1 day. A miracle occurred as the oil lasted for 8 days until new supplies could be found.
As the oil is the feature of the miracle, fried foods play an active part in the culinary celebrations. Latkes and donuts are a great favourite.
