The best way to roast almonds is to place them in the oven – Fan plus at 200 for about 8 minutes, 0* moisture. This gives them their golden colour but more to the point, the stronger pungent flavour.

Serves: 6 people

Ingredients:

12 chicken breasts/thighs - skin removed
Salt and freshly ground black pepper

2 tablespoons vegetable oil

2 onions, peeled and thinly sliced
4 cm chopped fresh ginger
150ml chicken stock
2 tablespoons honey
2 tablespoons chopped fresh rosemary

Topping
30 green grapes halved
50g slivered almonds – toasted
50g whole almonds - toasted

Method

1. Season the chicken breasts or thighs with salt and pepper.
2. Heat the oil in a large frying pan set over medium-high heat.
3. Add the chicken, brown on both sides, add the onions, ginger, stock, honey and rosemary. Cook for 3 minutes and then transfer in an ovenware dish.
4. Place the chicken in the Miele combi steam oven and programme combi 1st stage 200 Fan plus with 95 % moisture for 35 minutes.
5. Remove and stir in the grapes and almonds
