Family cooking is a challenge. Finding quick, tasty, nutritious recipes that everyone will eat and not fuss about can become a real bore – the temptation to make plain dishes, make the same over and over or to cater separately for the fuss pot is enormous.

I have made a selection of Mexican style dishes and everyone round the table ate and enjoyed! For a short cut you can buy guacamole and salsa ready-made.

Preparation Time: 20 minutes
Cooking Time: 15 minutes
Serves: 6 people

Ingredients:

6 chicken breasts – skin removed and cut into cubes
2 tablespoons vegetable oil
1 large onion – peeled and roughly chopped
1 red pepper –core removed and sliced
1 green pepper – core removed and sliced
2 cloves garlic – peeled and finely chopped
Salt and freshly ground black pepper – to taste
12 soft flour tortillas
400g pinto beans
200g tomato salsa – recipe below
Guacamole – recipe below
Iceberg lettuce or other plain lettuce – to garnish

Method

1)Pre-heat the oven to 200 C/ 400 F.
2)Heat the oil in a large frying pan. Sauté the chicken cubes and onion until well browned.
3)Add the peppers and garlic and continue to cook for 5 minutes.
4)Place the tortillas on an oven tray and cook for 2 minutes or until crisp.

To serve the stylish way: Place 2 tortillas on each plate. Top with the chicken and peppers. Spoon on some tomato salsa, refried beans warmed and/ or guacamole and garnish with some shredded lettuce.

Guacamole
This is a very quick spicy dip that requires no cooking. Ideal with an assortment of crudités such as carrot sticks, radishes, peppers, button mushrooms, strips of celery, fine beans, snow peas, cucumber or even broiled vegetables.
