BBQ sauce is a flavouring, marinade, cooking sauce and dipping sauce. The ingredients vary widely around the world but most contain vinegar, and or tomato paste/ sauce, spices like mustard and black pepper and sweeteners such as sugar and molasses. As it combines both sweet and sour ingredients, the Chinese believe that this sauce is a prime example of perfect Ying and Yang combinations.

In 1492, Columbus sailed to the New World, discovered natives using wooden cooking devices like BBQs to preserve and smoke foods and from here centuries later the sauce was developed. Heinz released its first BBQ sauce in 1940, and Kraft followed soon after.

My sauce has an Asian influence with the addition of soy sauce and sweet chili sauce – a tasty recipe to use in so many ways!

Store for up to 2 weeks in the fridge.

Preparation Time: 5 minutes
Cooking Time: 3 minutes

Ingredients:

3 cloves of garlic – peeled and chopped
2 tablespoons red wine vinegar
3 tablespoons brown sugar
60g honey
150g Tomato ketchup
60 ml soy sauce
60 ml sesame oil
2 tablespoons sweet chilli sauce

Method

1. Combine all the sauce ingredients into the food processor. Pulse it a few times and then blend on high until it has thoroughly combined into a smooth sauce.
2. Heat the sauce either in the microwave or in a small saucepan.
