This is a great way of brightening up a plain piece of chicken. It can be grilled should the weather change at the last minute. I love to combine fruit and poultry and by adding chunky pieces of plum; the sauce has a more interesting texture. To achieve a crispy lined appearance on the chicken breast, leave for at least 7 minutes on a medium heat before turning. Always check the thickest piece of chicken for doneness before serving… the juices should be clear and not pink ~ one does not want to give one’s guests food poisoning!

Cooking Time: 20 minutes
Serves: 4 people

Ingredients:

4 boneless chicken breasts,
2 tablespoons olive oil
Sea salt and freshly ground black pepper
Zest of 1 orange

Plum and Orange Sauce
2 tablespoons olive oil
1 red onion – peeled and finely chopped
3 ripe plums – stoned and sliced into thick pieces
1 tablespoon fresh ginger – peeled and finely chopped
Juice of 1 orange
1 tablespoon honey
5 tablespoons fresh parsley
Sea salt and freshly ground black pepper

Method

1)Ignite your BBQ. When the flames have died down and the coals are white it is ready to use.
2)Rub the chicken breasts with oil and sprinkle them with salt and pepper and orange zest pressing gently so that it adheres.
3)Put the chicken on the grill directly over the coals skin side down and cook, turning once until they are opaque all the way through. ( Roughly 7- 10 minutes per side.)
4)While the chicken is cooking make the sauce on the hob. Heat the oil in a large sauté pan over a medium heat until hot but not smoking. Add the onions and cook until soft.
5)Add the plums and ginger and cook stirring frequently for another 3 minutes or until the plums are tender but not mushy. Remove from the heat, stir in the orange juice, honey and parsley and season to taste.

To serve the stylish way: Remove the chicken from the BBQ, pour over the sauce and garnish with sprigs of parsley.
