Ingredients:
- 100g unsalted butter/ non-dairy margarine
- 100g light brown sugar
- 50g clear honey
- 1 large egg
- 1 teaspoon vanilla extract

- 180g plain flour
- 200g rolled old-fashioned oats
- 2 teaspoons ground cinnamon
- 1 teaspoon mixed spice
- 1 teaspoon baking powder
- Pinch salt
- ~
- 1 Granny Smith apple – peeled, cored and finely chopped
- 2 teaspoons fresh lemon juice
Method
- Preheat the oven to 160°C / 350°F / Gas mark 4.
- Line two oven trays with baking paper.
- In an electric mixer, cream the butter/non-dairy margarine, brown sugar and honey. Then mix in the egg and vanilla extract.
- Combine flour, oats, cinnamon, mixed spice, baking powder and salt. Then add to the butter mixture to make the dough.
- In a separate bowl, toss the apples with lemon juice. Then add to the dough.
- Using an ice cream scoop, drop balls of the dough onto the prepared baking trays.
- Flatten each ball slightly with the back of a fork.
- Bake in the preheated oven for approximately 20 minutes or until set and golden.
- Cool on wire rack.
