Denise says:

These delicious fudge like chocolate brownies are the ultimate chocolate treat! No excuse is required to either make them or eat them! The secret to their success is to remove them from the oven when they are slightly under cooked ~ as they cool so they set! Plain chocolate with a minimum of 70% cocoa solids gives the best flavour.


If your chocolate brownies are getting a bit stale, give them a 10 second blast in the microwave ~ this will rekindle the gooey chocolate centre.


Brownies were ‘invented’ in the US in 1893 as a ‘ladies dessert’ ~ easier to eat than a pie and smaller than a slice of cake thus suitable for a boxed lunch!

Variations are enormous, but all will satisfy a true chocoholic’s passion!



Preparation Time: 20 minutes
Cooking Time: 40 minutes

Makes: 36

Ingredients:

4 eggs

250g dark brown sugar

175g plain chocolate- melted

200g margarine – melted

100g plain flour

2 teaspoons baking powder

3 drops vanilla essence

2 tablespoons walnuts/pecans

Method

1) Line a 23 cm x 23 cm square tray with baking parchment paper

2) Pre –heat the oven to 160 C

3) Whisk the eggs and sugar together until thick.

4) Add the melted chocolate and margarine, followed by the eggs.

5) Sift in the flour and baking powder into the mixture.

6) Add vanilla essence and chocolate and walnuts or pecans

7) Pour into the prepared trays and bake for 30 – 40 minutes or until firm to touch.

8) Leave to cool before cutting up into squares.
